  • 1 large egg

Instructions

  • Prepare the Potatoes:
    • Grate the peeled potatoes using a coarse grater. Place the grated potatoes in a colander and press them to remove as much liquid as possible. This step is key to ensuring the patties turn out crispy.
  • Season the Potatoes:
    • Transfer the grated potatoes into a mixing bowl. Add salt, paprika, and black pepper. Stir well to evenly coat the potatoes with the seasoning.
  • Incorporate Fresh Herbs:
    • Add the chopped parsley and basil to the bowl, mixing them into the potato mixture. These fresh herbs will add bright, aromatic flavors to the patties.
  • Bind the Mixture:
    • Sprinkle the cornstarch over the mixture and add the egg. Stir everything together until well combined. If the mixture feels too wet, you can add a bit more cornstarch or breadcrumbs to help it hold together.
  • Form the Patties:
    • Wet your hands slightly with water and shape the potato mixture into small patties (about 3-4 inches wide). If the mixture sticks to your hands, the water will help prevent that.
  • Coat the Patties:
    • Spread breadcrumbs on a plate. Press each patty into the breadcrumbs, making sure both sides are coated evenly. This will create a nice, crispy exterior when frying.
