Ingredients

  • 6 medium green bell peppers
  • 1 lb ground beef
  • 1 onion, chopped
  • 1 (6 7/8 ounce) box Rice-A-Roni Spanish flavor
  • 1 (16 oz) can tomato sauce
  • 1 teaspoon sugar
  • 1 (14 1/2 ounce) can diced tomatoes (for the rice)
  • 1 cup shredded cheddar cheese (or American cheese)

Instructions

Step 1: Prepare the Bell Peppers

Start by cutting off the tops of the bell peppers and removing the seeds. You can set the tops aside to use later if you’d like. Then, parboil the peppers for about 5 minutes, just enough to soften them. Drain them well afterward.

Step 2: Cook the Beef and Onion

Next, brown the ground beef with the chopped onion in a skillet. Stir occasionally until the beef is fully cooked, and the onion turns soft. Once done, drain the excess fat and set the mixture aside.

Step 3: Make the Rice

Prepare the Rice-A-Roni Spanish rice according to the package instructions. However, use the can of diced tomatoes in place of water for extra flavor. Stir in the tomatoes as the rice cooks for a savory touch.

Step 4: Stuff the Peppers

Now that the beef, rice, and onion are ready, combine them into one flavorful filling. Stuff each pepper with this mixture, pressing it down gently to make sure the peppers are filled completely.

Step 5: Add the Tomato Sauce

In a small bowl, mix the teaspoon of sugar into the tomato sauce. Pour this sauce around the peppers in the baking dish, making sure not to cover the tops. This helps keep the peppers nice and juicy while they bake.

Step 6: Bake the Peppers

Cover the baking dish with foil and bake at 350°F for 35 minutes. Afterward, remove the foil and sprinkle shredded cheese on top of each stuffed pepper. Bake for an additional 5 minutes to melt the cheese until bubbly and golden.

Step 7: Serve and Enjoy!

Once the cheese is melted and golden, remove the dish from the oven. Serve your stuffed bell peppers hot, and be sure to spoon some of that savory tomato sauce around the peppers on your plate.

Quick Tip: To mix things up, you can add extra vegetables like chopped mushrooms, spinach, or even zucchini to the beef mixture. For a leaner version, substitute the ground beef with ground turkey or chicken.

These stuffed peppers are packed with flavor and make a comforting, hearty meal for any night of the week. Enjoy every bite!
