Description

German Chocolate Cupcakes are the perfect dessert.

Ingredients

Scale

For the Cupcakes:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 6 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • ½ cup buttermilk
  • ½ cup warm water
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract

For the Coconut-Pecan Frosting:

  • ½ cup unsalted butter
  • 1 cup evaporated milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • ¾ cup chopped pecans

Instructions

Follow these simple steps to create these crowd-pleasing cupcakes:

Step 1: Bake the Cupcakes

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the egg, buttermilk, warm water, vegetable oil, and vanilla extract. Mix until the batter is smooth and well combined.
  4. Divide the batter evenly into the cupcake liners, filling each about two-thirds full.
  5. Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely before frosting.

Step 2: Make the Coconut-Pecan Frosting

  1. In a medium saucepan, combine butter, evaporated milk, granulated sugar, and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens (about 10 minutes).
  2. Remove from heat and stir in vanilla extract, shredded coconut, and chopped pecans. Let the frosting cool to room temperature before spreading it on the cupcakes.

Step 3: Assemble the Cupcakes

  1. Once the cupcakes have cooled, spoon the frosting generously over each one. Be sure to cover them with a thick layer of the rich coconut-pecan mixture.
  2. For an extra touch, you can drizzle melted chocolate over the frosting or garnish with a pecan half for added flair.

Tips for Success

  • Use high-quality cocoa powder: A great cocoa powder enhances the depth of the chocolate flavor.
  • Cool cupcakes completely: Allow the cupcakes to cool before frosting to prevent the frosting from melting into the cake.
  • Store leftovers properly: Keep the cupcakes in an airtight container for up to 3 days to maintain their freshness.
