Greek Salsa: A Flavorful Mediterranean Side Dish

This Greek salsa makes a fantastic side dish or appetizer, offering a fresh change from the usual salad or crudité. Packed with Mediterranean flavors from the lemon vinaigrette and creamy feta cheese, it’s a hearty, delicious addition to any meal.

Serves: 4-6
Prep Time: 1 hour 20 minutes

Ingredients:

  • 1 1/4 cups diced cucumber
  • 1 cup diced Roma or beefsteak tomatoes
  • 1/2 diced red onion
  • 1/4 cup sliced black olives
  • 1 1/2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1/4 tsp dried oregano
  • 1/2 tsp dried dill (or 1 tsp fresh chopped dill)
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Pita chips or wedges for dipping

Instructions:

  1. In a large bowl, combine the cucumber, tomatoes, onion, and black olives.
  2. In a smaller bowl, whisk together the lemon juice, olive oil, oregano, dill, salt, and pepper. Pour the dressing over the vegetables and toss well. Refrigerate for 1 hour.
  3. Just before serving, fold in the crumbled feta cheese. Serve with pita chips or wedges, or as a side dish with fish or chicken.
