This Greek salsa makes a fantastic side dish or appetizer, offering a fresh change from the usual salad or crudité. Packed with Mediterranean flavors from the lemon vinaigrette and creamy feta cheese, it’s a hearty, delicious addition to any meal.

Ingredients:
- 1 1/4 cups diced cucumber
- 1 cup diced Roma or beefsteak tomatoes
- 1/2 diced red onion
- 1/4 cup sliced black olives
- 1 1/2 Tbsp lemon juice
- 1 Tbsp olive oil
- 1/4 tsp dried oregano
- 1/2 tsp dried dill (or 1 tsp fresh chopped dill)
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Pita chips or wedges for dipping
Instructions:
- In a large bowl, combine the cucumber, tomatoes, onion, and black olives.
- In a smaller bowl, whisk together the lemon juice, olive oil, oregano, dill, salt, and pepper. Pour the dressing over the vegetables and toss well. Refrigerate for 1 hour.
- Just before serving, fold in the crumbled feta cheese. Serve with pita chips or wedges, or as a side dish with fish or chicken.
