Coconut Chewies

  • Author: Celine

Description

Coconut Chewies are simple, bite-sized treats that are sweet, chewy, and packed with coconut flavor.

Ingredients

Scale
  • 2 cups shredded sweetened coconut
  • ½ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup all-purpose flour (optional, for firmer texture)

Optional Add-Ins:

  • ¼ cup mini chocolate chips
  • ¼ cup chopped nuts (almonds or pecans work well)
  • Melted chocolate for drizzling (optional)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Ingredients

  • In a large bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and salt.
  • If you prefer a firmer texture, stir in the flour.
  • Add any optional ingredients like mini chocolate chips or chopped nuts, and mix well.

Step 3: Form the Chewies

  • Using a tablespoon or cookie scoop, scoop the mixture into small mounds and place them on the prepared baking sheet.
  • Gently press each mound to help it hold its shape.

Step 4: Bake

  • Bake for 10–12 minutes, or until the edges are golden brown.
  • Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 5: Optional Decoration

  • If desired, drizzle melted chocolate over the cooled coconut chewies for an extra touch of sweetness.
  • Let the chocolate set before serving.

Notes

Tips for Perfect Coconut Chewies:

  • Use Fresh Coconut: Fresh, sweetened shredded coconut gives the best flavor and texture.
  • Monitor Baking Time: Keep an eye on them while baking to avoid over-browning.
  • Customize Flavors: Add a splash of almond extract or sprinkle with sea salt for a sweet-salty twist.
