Maryann Stoit Here’s a simple and delicious recipe for Baked Cottage Cheese Eggs!

Ingredients

Scale
  • 1 cup cottage cheese (preferably low-fat or full-fat)
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, tomatoes, or any veggies you prefer)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Fresh herbs for garnish (like chives or parsley, optional)

Instructions

Preheat the Oven:
Preheat your oven to 350°F (175°C).

  1. Prepare the Baking Dish:
Grease an 8×8-inch baking dish with a little oil or cooking spray to prevent sticking.
  2. Mix Ingredients:
In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, diced vegetables, salt, pepper, and garlic powder (if using). Stir everything together until fully mixed.
  3. Pour into Baking Dish:
Pour the mixture into the prepared baking dish, spreading it out evenly.
  4. Bake:
Bake in the preheated oven for about 25-30 minutes, or until the eggs are set and the top is lightly golden.
  5. Cool and Serve:
Let the dish cool for a few minutes before slicing. Garnish with fresh herbs like chives or parsley if desired.

Notes

Storage Information:

  • Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven before serving.
  • You can also freeze individual portions for up to 2 months. Simply wrap them tightly and store in a freezer-safe container or bag. Reheat from frozen in the oven for the best texture.
