- 2 cups old fashioned oats
- 1/4 cup canned pumpkin puree
- 1/4 cup dried cranberries
- 1/2 cup pumpkin seeds
- 1 teaspoon pumpkin pie spice
- 1/2 cup honey
- Optional: 1/4 cup almond butter (to reduce sweetness and add protein)
Instructions
- Combine Ingredients: In a large bowl, add the oats, pumpkin puree, dried cranberries, pumpkin seeds, pumpkin pie spice, and honey (or the honey and almond butter mixture, if using). Stir well until all ingredients are evenly combined.
- Form Balls: Wet your hands lightly with water to prevent the mixture from sticking. Take small handfuls of the mixture and roll them into 1-inch balls. Place the balls on a parchment paper-lined baking sheet.
- Chill: Refrigerate the balls for 20 minutes, or freeze for 10 minutes, to allow them to set and firm up.
- Store: Transfer the chilled bites to an airtight container and store in the refrigerator.
