Roast Beef with Fondant Potatoes Recipe

Ingredients:

For the Roast Beef:

  • 4 to 5 pounds beef roast (e.g., sirloin or ribeye)
  • Salt and pepper to taste
  • 2 teaspoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped

For the Fondant Potatoes:

  • 6 large potatoes, peeled and cut into cylinders
  • 1/2 cup unsalted butter
  • 1 cup beef or chicken broth
  • Fresh thyme sprigs
  • Salt and pepper to taste

Instructions:

  1. Roast Beef:
    • Preheat the oven to 375°F (190°C).
    • Season the beef roast generously with salt and pepper.
    • In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
    • Sprinkle the minced garlic and chopped rosemary over the roast.
    • Transfer the roast to a roasting pan and cook in the preheated oven until the desired doneness is reached.
  2. Fondant Potatoes:
    • In a large ovenproof skillet, melt butter over medium-high heat.
    • Add the potato cylinders and sear each side until golden brown.
    • Pour in the broth and add thyme sprigs. Season with salt and pepper.
    • Transfer the pan to the oven and bake until the potatoes have absorbed the liquid and are tender.
  3. Resting and Serving:
    • Allow the roast to rest for 15 minutes before slicing.
    • Serve the roast beef alongside the luxurious fondant potatoes for an elegant meal.
